Grilled Lamb Shoulder Blades

Hubby dearest loves to grill and hence atleast once every week, we light up the grill. This is a very simple recipe for grilling super delicious lamb shoulder blades.
Ingredients:
- Two lamb shoulder blades
- Olive oil 1 tbs
- Ginger paste 1 tbs
- Garlic paste 1 tbs
- Rosemary 1 tsp
- Oregano 1 tsp
- Red chili flakes 1 tsp
- Salt 1 tsp or to taste
- Black Pepper
Preparation:
- Mix olive oil, ginger paste, garlic paste, rosemary, oregano, red chili flakes and salt in a bowl and set aside
- Sprinkle black pepper on both sides of the shoulder blades
- Rub the marinade on both sides and leave overnight in the fridge (you can marinate for even longer, but I like to leave for 24 hours minimum before grilling)
Grilling (Gas Grill):
- Preheat grill to 450 F
- On high heat, sear both sides for 1 minute each
- Lower heat until temperature is approximately 350 F
- Cook until desired wellness, 5-7 minutes on each side for medium to medium-well
