Serves 2

Ingredients:

  • Broccoli – 1 cup
  • Leek – 1 cup 
  • Onion – 1 medium
  • Spinach – 1 cup
  • Korean buckwheat soba noodles pack
  • Soy sauce – 2 tablespoons or to taste
  • Sesame Oil – 2 tablesspoons
  • Red chili powder – 1 teaspoon (can add more if you like it hot!)
  • Brown sugar – 1 teaspoon
  • Sesame seeds – 1 teaspoon
  • Sriracha hot sauce (optional)

Directions:

  1. Cook the noodles according to package directions. 
  2. Heat the wok
  3. Add onions and stir for a few seconds
  4. Add the leek and stir again
  5. Add the broccoli and stir again
  6. Add soy sauce, sesame seeds, salt and red chili powder and stir for a minute
  7. Now add the spinach and stir again for another minute
  8. Add the sesame oil and stir for about 2 minutes. 
  9. While the above vegetables are stir-fried, the noodles should also be ready. 
  10. Place the noodles in your serving bowl and top with the stir-fry mix. 
  11. Drizzle with Sriracha (optional)
