Pumpkin Bread with chocolate chips and walnuts

Ingredients:
Vegetable oil - 99 grams
Eggs – 2 (beaten)
Granulated Suger – 264 grams
Water – 76 grams
Pumpkin Puree – 212 grams
Baking Soda – ½ teaspoon
Baking Powder – ¼ teaspoon
Salt – ¾ teaspoon
Vanilla Essence – ½ teaspoon
All-Purpose Flour – 200 grams
Chocolate Chips – 128 grams
Chopped Walnuts – 57 grams
Directions:
- Preheat oven to 350° F.
- Lightly grease a 9”x5” loaf pan with olive or vegetable oil.
- Combine the vegetable oil, eggs, sugar, water and pumkin puree in a mixing bowl and mix gently.
- Once combined, add the baking soda, baking powder, salt, vanilla essence and all-purpose flour.
- Mix gently again till flour is well combined. You may also see some lumps. Do not over mix. It is okay to leave those as is.
- Once the flour is well combined, fold in chocolate chips and walnuts.
- Pour the batter in the prepared pan evenly.
- Bake on middle rack for 70 minutes.
Tips:
- You can use hand or stand mixer, but I prefer to mix by hands as everything must be done delicately.
- You can add chocolate chips or walnuts to your liking. I find the measurements in this recipe to be perfect.
- Same recipe can be followed with wheat flour instead of all-purpose.
- I use vanilla essence, but you can also use vanilla extract if you prefer.
- When mixing the flour, you may see some tiny flour lumps. Do not try to over mix at this point. The lumps will break themselves when baking.
